In a simple html form I need to create a hidden form field that gets the current date from the server's side and adds 14 days to it and posts that new date to the form action (a php script)

Yes, there are all sorts of ideas.
That may be the answer you're looking for, but that's what you asked for. My response may seem petty and nit-picky, but learning how to ask questions the smart way is extremely important: it helps others understand what you want and it helps you understand your problem.
As for your problem, what have you tried? PHP's date and time functions will help you with the date arithmetic.
It was actually way beyond my ability, I ended up hiring a guy to do it for me and he edited the program that was sending out the emails and everything works wonderfully now... just dont ask me the details of what he did. Now I am stuck trying to get the expiration date to appear on top of the coupon image, but that's a whole new thread!
